The defense penalty is -5 defense levels for each opponent beyond the first (so -0 for 1 opponent, -10 for 2 opponents, -15 for 3 opponents, -20 for 4 opponents, …)

If you have the I Can't Dance perk you suffer an additional -15 defense level penalty if fighting more than one opponent (so -0 for 1 opponent, -25 for 2 opponents, -30 for 3 opponents, -35 for 4 opponents, …)
